(notes are Lisa's) In a mixing bowl, combine: 2 1/4 cups tapioca flour 1 teaspoon salt 1/3 cup sugar 1/2 teaspoon xanthan gum In a food processor, place: 1 cup macadamias 1/4 cup water 1/2 cup canola oil 1 teaspoon vanilla Grind the nuts very fine in the food processor. Add contents of food processor to bowl and mix. (I cheat and it never seems to matter. I add the contents of the bowl to the food processor at this point and let the machine do the mixing. It tastes the same in the long run and is a lot less work). Roll into balls and flatten. Bake on slightly greased cookie sheet (or if using stoneware like pizza stones or other cooking stones from Pampered Chef, don't bother to grease) at 350 degrees for 10 - 15 minutes or until they begin to turn golden brown. They are a bit crispier if a bit golden. I use large cookie cutters for these cookies. During the year I use mostly butterflies but will use bells, etc. for Christmas. Enjoy!
