Orange Oat Balls

Source: Healthy Food Choices

 

1/4 cup chopped dates and water

1/2 cup orange juice concentrate

1/2 cup all natural crunchy peanut butter (just peanuts)

1/2 cup raisins

1/2 cup unsweetened carob chips (gf/dairy free)*

1/2 cup sunflower seeds

1 1/2 cups rolled oats

unsweetened fine coconut (optional)

 

Place dates, water, and orange juice concentrate in a pot and let soak

until dates are soft. Bring to a boil and mash until dates azre well

blended. Add peanut butter and mix well. Add remaining ingredients

except coconut. Mix well with hands. Make balls (1 Tbsp. each) and

roll in coconut. Place on waxed paper and chill.

 

*May substitute gf/dairy-free chocolate chips.
