Guest guest Posted December 6, 2004 Report Share Posted December 6, 2004 BUCKWHEAT LATKES 1 pkg. dry yeast 2 cups warm water, separated 1 tbsp sugar 2 c.soy milk 1/2 cup flour of choice (soy, fava bean, potato, etc.) 1 tsp. salt 3 1/4 c. buckwheat flour 2 tbsp. liquid sweetener of choice 1/4 c. olive oil 1/4 tsp. baking soda Egg replacer for 1 egg (EnerG) Soften yeast in 1/4 c/ warm water. Add sugar to soy milk as well as remaining water. Cool to lukewarm before adding softened yeast. Mix dry ingredients in a large bowl. Make a well in the centre, and pour in liquid mixture. Stir until smooth. Cover and let stand in a warm place to rise for 4 hours. Beat down and add sweetener, oil, baking soda and egg replacer. Beat thoroughly until well mixed. Brown on both sides on greased griddle or frying pan. Pour maple syrup on pancakes when serving. Yield: Serves 6 " I send you love and good dishes --- from my house to yours!
