Converted to vegan and gluten free by me!*** BEET LATKES 1 cup finely chopped fresh beets 1 box silken tofu, blended (or use soy flour as binder instead) 3 tbsp. soy milk 2 tbsp. cornstarch 1/2 tsp. sugar or sweetener of choice 1/2 tsp. ground nutmeg 1 tsp. salt Combine all ingredients in a mixing bowl. Mix well and bake in pancake fashion on a hot buttered griddle or heavy skillet. Serve with fruit marmalade or preserves.
