Wednesday is our pasta night, so we are also having gf pasta with sauce

tonight.

 

Other ideas: Monday we had sweet potato and squash soup, Tuesday we had stir

fry. Tomorrow maybe tacos.

We had ratatouille (I had a small quantity in the freezer which was left over

from a meal  about two weeks ago) served wrapped in a wholemeal tortilla with a

little chopped feta, chopped coriander/cilantro and a small spoon of sour cream.

Hubby asked for Falafel this week, so I made it for dinner last night with pasta

salad (artichoke hearts, blk olives, roasted red pepper strips, red onion, feta

cheese, Italian dressing). We put Cowgirl Ranch on our falafel (it's Annies)

with lettuce, tomato, and onion slices.

Tonight will be taco salads with tofu crumbles and a fix it yourself bar :)

On Monday night we had make your own pizza with salad and breadsticks.

Possibly stir fry on Thursday night... Have to think about it some more :))

I made a casserole I got from the VeganGal newsletter which she calles

Broccoli Rice Œa Roni Casserole. Here¹s the official recipe, then I¹ll tell

you how I modified it:

 

BROCCOLI RICE ŒA RONI CASSEROLE

1-1/4c brown rice

2 cups un-chicken broth or veggie stock

1 cup water

2 cups chopped broccoli tops and stems

2 cups sliced carrots

1 (15.5 oz) can great northern beans with liquid

1 (2 oz) jar pimento

1 Bay leaf

2 Tbsp nutritional yeast

1 Tbsp basil

2 tsp vegan instant chicken-style broth

1/2 tsp rosemary

1/2 tsp thyme

1/2 tsp garlic powder

1/2 tsp salt (optional)

 

In a deep casserole dish combine all the ingredients and stir to combine

well. Turn oven to 400F. Cover casserole and let preheat and cook for about

80 minutes.

MY MODIFICATIONS:

First, I left out the nutritional yeast, basil and bay leaf and instead

added 2 Tbsp smoked paprika. Then, in the last 25 minutes I toss a

vegetarian chicken-style roast in the oven alongside the rice dish. When

they¹re done, I dice half the roast and toss it through the casserole (save

the rest for sandwiches or another dish). You could really modify it just

about any way you like. It¹s a long time to cook because of the brown rice,

but as we¹re heading into colder weather in Australia, I don¹t mind. I come

home, toss the dish together and put it in the oven, then I have time to

work out and shower. When I get out of the shower, dinner is ready. :)

Oh, I forgot to mention in the Rice A Roni casserole, I also left out

pimentos because I can¹t find them in Australia.

This rice recipe looks great. Thanks to everyone for responding. I was also

reminded by someone elses post about falafels. I have a gluten free recipe

somewhere. I will dig it up and make it soon.

i posted about having falafel ;)). They were yummy!

I also tried the rice dish and it was yummy, too! I added the naked cutlet to

the recipe, but kept everything else the same as original.

Tonight is stir fry with fried tofu and soba noodles. It's cooling as we

speak/write and I'm finishing my pre-meal cocktail.

I am making a herb garden, and have grown thyme, parsley and chives from

seed.I also have chervil, lemon grass and fennel growing. In the middle is

an artichoke and I am about to put in an asparagus plant.

Brown rice smothered with stir fried onions, garlic, Ginger, zucchini,

just made seitan pieces, store bought Chinese sausage, and smoked

sausage, (veggie from May Wah on Hester st of course), and then threw

in some soy, rice wine vinegar, brown sugar, and broth from the

seitan. Thickened up a bit with a cornstarch slurry. Sirracha.

And of course steamed veg dumplings to start with a sesame soy dipping

sauce.

Sounds good although I'm curious as to what Chinese Sausage is and if it's

veg.? You did add that the smoked sausage was veg so I'm thinking the

Chinese sausage was too?

is.

 

" Standard " Chinese sausage is pork.... VERY high in fat.  Mostly soy sauce and

orange juice with some spices depending on who makes it (or if home made).

some sort of spicy tomato sauce over pasta (we didn't get to go shopping over

the weekend so it is a store cupboard raid tonight! and we don't have a huge

store cupboard LOL)

I have started harvesting spinach, rocket and spring onions from my garden

to make delicious and nutritious salads.
