Non-Potato Latkes

Shalom Y'all,

 

Instead of white potatoes which are high GI (glycemic index), try grated

sweet potato, turnip, jicama or zucchini. All work well, but remember to

squeeze as much liquid as possible from the grated veggies before mixing

with the remaining ingredients.

Do you know if Jerusalem artichokes or konnyacku (japanese tubers) would work?

I know they are slightly more starchy than the ones you mentioned, but zucchini

are very dear here right now, as are jicama.

I have not personally used either, but I have seen recipes using

Jerusalem artichokes in latkes. I would give either (or both) a try

and see how they do! Just remember to squeeze as much liquid out as

possible.
