Gorilla Munchies

1/2 cup chopped sunflower seeds

1 cup chopped walnuts

1 cup unsweetened coconut

2 1/2 cups homemade granola (gf if necessary)

1/2 cup honey (or vegan alternative)

1 cup all natural peanut butter

1/3 cup carob chips (gf and dairy free) OR carob power and 1/4 cup water

 

Mix sunflower seeds, walnuts, coconut, and granola in a bowl. Heat

honey. Add peanut butter. Continue to heat and stir until peanut

butter and honey are well blended. Remove from heat. Add carob chips

and stir until chips are melted (or substitute carob powder and

water). Add to dry ingredients in bowl and mix well. Form into balls

and refrigerate or pack into a 9 " x 13 " pan, cut into squares before

it sets. (You may have to add a little water to make it easier to

handle).

 

*May substitute dairy-free and gluten-free chocolate chips; most vegan

carob chips contain malt barley. Unsweetened (w/o malt barley) may be

available in some areas, but they are very difficult to find.
