Kim, who posted the recipe originally? Was it me (I don't think so). Could

we email them personally and ask? Sometimes list members go onto " no mail "

and won't see a generalized posting on the forum.

Potato Salad with Chickpeas and Smoked Tofu

" Die vegane Küche " from Ingrid Newkirk and Peta

1 lb (450g) hard boiling potatoes

1/2 l vegetable broth

1 can chickpeas

2 onions, cubed

1 cucumber, sliced

4 tomato, in eights

1 package smoked tofu, cubed

4 tbsp (1/4 cup) sunflower oil

2 tbsp (30 ml) balsamic vingegar

1 bunch parsley, finely chopped

2 tbsp (6 tsp) whole grain mustard

salt and pepper to taste

Cook potatoes in their skin, best the day before, then they won't

fall apart. Peel and slice. Pour the vegetable broth over them. Mix the

remaining ingredients and let stand. A great salad for a vegan

barbecue.

I just did a search on the net, found the origunal recipe. The

translation was a little rough (from German using Google), but it

looks like it is 1/2 litre.
