Potato Salad with Chickpeas and Smoked Tofu " Die vegane Küche " from Ingrid Newkirk and Peta 1 lb (450g) hard boiling potatoes 1/2 l vegetable broth 1 can chickpeas 2 onions, cubed 1 cucumber, sliced 4 tomato, in eights 1 package smoked tofu, cubed 4 tbsp (1/4 cup) sunflower oil 2 tbsp (30 ml) balsamic vingegar 1 bunch parsley, finely chopped 2 tbsp (6 tsp) whole grain mustard salt and pepper to taste Cook potatoes in their skin, best the day before, then they won't fall apart.
