Also, I've found heaven in a bowl in the form of kale with onions and beans and here is the recipe (this is another Colleen Patrick- Goodreau recipe - she didn't actually write it down, she just described it in a cooking class, and I finally made it tonight.) two teaspoons olive oil large onion chopped 1/4 cup water 2 cloves garlic, crushed 1/2 cup chopped red, yellow or orange pepper 1/2 cup veggie broth bunch of kale, chopped can of white beans, rinsed and drained 1/4 teaspoon smoked paprika hot sauce Saute the onion in two teaspoons of oil, add the water and cover, stiring occasionally for about 20 minutes or until golden. Add crushed garlic and chopped pepper and cook for about 5 more minutes. Add the veggie broth, kale and smoked paprika and cook for about 8 minutes or until the kale is tender.
