Guest guest Posted December 29, 2005 Report Share Posted December 29, 2005 Harvest Baked Beans 1 Tbsp. vegan margarine 1 medium onion, chopped 2 1/2 c. tomato sauce 1/4 c. pure maple syrup 1 c. catsup 1/2 c. brown sugar 1/3 c. lemon juice 2 Tbsp. vegan Worcestershire sauce 1/4 c. Braggs liquid aminos 1 tsp. thyme leaves 1 tsp. marjoram leaves 2 c. cooked great northern beans 2 c. cooked lima beans 2 c. cooked butter beans 1 c. cooked pinto beans 1. Place the margarine in a saucepan and add minced onions. Sauté until tender and clear, then add the tomato sauce, lemon juice, brown sugar and soy sauce. 2. In a separate mixing bowl, stir together the apple juice concentrate and cornstarch with a fork until smooth. Add to sauce mixture and bring to a boil. Lower heat and simmer for 5 minutes or until thick. 1. Add all remaining ingredients. Pour into casserole baking dish. Bake for 1 hour at 375 degrees. Serve hot or cold. Yields: 24 half-cup servings This recipe is especially good for picnics or potluck dinners because it is good served either hot or cold.
