Asian Noodle Salad

Amount Measure Ingredient -- Preparation Method

1/4 cup rice vinegar

1 tablespoon sesame oil

1/2 cup vegetable oil

1 teaspoon soy sauce

1 clove garlic -- minced

1 pound fresh or dried angel hair pasta

1 cup shredded carrots

1/2 cup slivered green onions

1/2 cup slivered snow pea pods

3/4 cup thinly sliced red bell peppers

 

1. In a small bowl, combine rice vinegar, sesame oil, vegetable oil, soy sauce

and garlic. Stir to mix and set aside.

 

2. Cook pasta according to package directions. Rinse with cool water when

cooked, drain and place pasta in a large bowl.

 

3. Add carrots, green onions, pea pods and red bell peppers to pasta.

 

4. Pour dressing over pasta and vegetables; toss to mix.

 

5. Serve at room temperature or refrigerate; serve chilled.

 

Servings: 4-6

 

~ Thai-Peanut Noodle Salad - Add 2 tablespoons smooth peanut butter and 1 tsp.

dried red chile pepper flakes in step 1.

roasted red peppers if fresh ones are not in season.
