Guest guest Posted August 10, 2005 Report Share Posted August 10, 2005 * Exported from MasterCook * Artichoke Rice Recipe By :Flexible Fare by Sandra Rudloff Serving Size : 4 Preparation Time :0:00 Categories : Rice Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons vegetable oil 1 cup long-grain rice 1 yellow onion -- minced 2 cups water or vegetable broth 1 1/3 cups chopped artichoke hearts 1 teaspoon salt 1/2 teaspoon freshly ground black pepper 1. In a large saucepan, heat oil over medium high heat. Add rice and saute until rice turns translucent. 2. Add onion and continue to sauté until rice begins to brown and onions are translucent, about 5 minutes. 3. Add water or broth, artichoke hearts, salt and pepper. Bring mixture to a boil, reduce heat to low, cover and simmer until rice is tender, about 15 minutes. Serve immediately. Servings: 4-6 ~ Brown and Wild Artichoke Rice - Omit long-grain rice. Use 1/2 cup brown rice and 1/2 cup wild rice in step 1. Increase water to 1 1/4 cups. ~ Artichoke and Pepper Jack Rice - Add 1 cup shredded pepper Jack cheese after rice has cooked at end of step 3. Add cheese and stir to mix. Stir until cheese has melted and is evenly distributed. Serve immediately.
