Guest guest Posted August 10, 2005 Report Share Posted August 10, 2005 * Exported from MasterCook * Delicate Potato Pancakes Recipe By :Flexible Fare by Sandra Rudloff Serving Size : 6 Preparation Time :0:00 Categories : Side Dishes Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 medium baking potatoes -- peeled 2 tablespoons minced yellow onion 2 eggs -- beaten 2 tablespoons all-purpose flour 1 teaspoon salt 1/4 teaspoon baking powder vegetable shortening for frying 1. Fill a large bowl halfway with cold water. Shred potato into water and let stand while preparing batter. 2. In a large bowl, mix together onion, eggs, flour, salt and baking powder, stirring to mix well. 3. Drain potatoes in a colander, shaking to remove excess water. Add potatoes to flour mixture and stir to mix. 4. Heat a large nonstick skillet or griddle over medium-high heat. Add 1 tablespoon shortening. Pour batter in 1/3 cups into skillet and cook for 10 minutes per side or until deep golden brown, turning only once. Serve hot. Servings: 6-8 ~ Rustic Potato Pancakes - Omit 3 peeled potatoes and use 3 unpeeled potatoes in step 1. ~ Delicate Cheddar Potato Pancakes - Add 1/2 cup shredded extra-sharp cheddar cheese in step 3 when you add potatoes in step 3. ~ Delicate Carrot and Potato Pancakes - Add 1/2 cup shredded carrots in step 3 when you add potatoes. ~ Delicate Potato and Chive Pancakes - Add 2 tablespoons minced chives in step 2 when you add potatoes.
