Guest guest Posted August 10, 2005 Report Share Posted August 10, 2005 * Exported from MasterCook * Fettuccine with Tomato-Mushroom Sauce Recipe By :Flexible Fare by Sandra Rudloff Serving Size : 4 Preparation Time :0:00 Categories : Entrees Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 ounce dried porcini mushrooms 1/2 cup boiling water 1 pound fettuccine 1/4 cup olive oil 1 yellow onion -- chopped 2 cups chopped white mushrooms 1 1/2 cups chopped shiitake mushrooms 2 cloves garlic -- minced 1 28 oz. can crushed red tomatoes 1. In a small bowl, combine porcini mushrooms and boiling water and let stand for 20 minutes. Drain mushrooms, reserving liquid. Chop mushrooms and set aside. 2. Cook fettuccine in a large pot of boiling salted water according to package directions; drain and keep warm. 3. In a large pot, heat oil over medium-high heat. Add onion and sauté until beginning to brown. Add white mushrooms, shiitake mushrooms and garlic. Reduce heat to medium and sauté for about 5 minutes, until mushrooms are tender. 4. Add chopped porcini mushrooms, mushroom liquid and tomatoes. Simmer uncovered for 10 minutes. 5. Transfer fettuccine to a warm serving bowl and pour hot sauce over the top. Toss until mixed and serve immediately. Servings: 4-6 ~ Fettuccine with Tomato Mushroom and Red Wine Sauce - Add 1/2 cup red wine in step 4. ~ Fettuccine with Tomato-Mushroom Cream Sauce - After sauce has simmered for 10 minutes in step 4, remove from heat and stir in 1/2 cup heavy cream. Proceed with recipe. ~ Tomato-Mushroom Lasagna - In step 2, add lasagna sheets to water, proceed with recipe and layer sauce over lasagna sheets. Bake until hot and bubbly.
