Guest guest Posted August 10, 2005 Report Share Posted August 10, 2005 * Exported from MasterCook * Greek-Style Couscous Salad Recipe By :Flexible Fare by Sandra Rudloff Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups cooked couscous -- cooled 1/2 cup diced cucumber 1/2 cup diced tomato 1/4 cup coarsely chopped pitted kalamata olives 2 tablespoons crumbled feta cheese DRESSING: 2/3 cup olive oil 1/4 cup red wine vinegar 1/4 teaspoon dried oregano 1/8 teaspoon salt 1/8 teaspoon freshly ground black pepper 1. In a medium bowl, combine cooked couscous, cucumber, tomatoes, olives and feta cheese. 2. In a separate bowl, combine all dressing ingredients; mix well. 3. Pour dressing over salad. Stir well to combine. Refrigerate until cold; serve. Servings: 4 ~ Greek-Style Couscous Salad with Sun-Dried Tomatoes - In place of diced tomatoes, use 1/4 cup finely chopped sun-dried tomatoes in step 1. ~ Italian-Style Couscous Salad - In place of feta cheese, add 2 tablespoons shredded Parmesan cheese and add 1/4 cup pine nuts in step 1.
