Guest guest Posted August 10, 2005 Report Share Posted August 10, 2005 * Exported from MasterCook * Grilled Quesadillas with Salsa Cruda Recipe By :Flexible Fare by Sandra Rudloff Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- SALSA CRUDA: 2 cups chopped tomatoes 1/4 cup minced red onion 1/4 cup chopped fresh cilantro 1/4 teaspoon ground cumin 1/4 teaspoon salt QUESADILLAS: 4 flour tortillas -- about 10 inches in diameter 1 cup shredded pepper Jack cheese 1/2 cup shredded fresh spinach leaves 1. Prepare a medium-hot grill. For salsa, combine all ingredients in a medium bowl. Let stand for 10 minutes before serving to allow flavors to blend. 2. Place 2 tortillas on a flat work surface. On each tortilla, sprinkle 1/2 cup shredded cheese. Keep cheese within 1 inch of the edge. Scatter 1/4 cup spinach over cheese and top remaining tortillas. 3. Place quesadillas on preheated grill. Cook for about 2 minutes, carefully flip and continue grilling for an additional 2 minutes. The tortillas should be lightly browned on each side. 4. Remove from grill and cut each quesadilla into quarters. Serve immediately and garnish with Salsa Cruda.
