I've been gluten free twice before (long story), but in November got my final confirmation that I should be gluten free all the time. I got the gene testing done at enterolab.com and confirmed that my two children I all have the gluten intolerance gene. This switch to gluten free wasn't near as traumatic as the first time I did it back in 1996. Since then I have learned to cook Thai and Indian foods and my family love them. My approach to gluten free is to think of all the things I can eat that don't have gluten in them or are a substitute for gluten, and we are amazingly happy. If we are full with other good and flavorful things that don't even go with bread, we are quite happy. But I would like to increase my repertoire of gluten free/vegan bread items for the times we do need them. I am all ears for what you are doing. And I am glad to share my Thai and Indian food recipes if there is anyone who is interested in this kind of cooking. My husband is very patient and this time is going gluten free with us. He considers it a good weight loss plan. And it is working really good for him. If you aren't eating bread, you aren't slathering margarine on it, which decreases calories quickly. And he loves flavorful Asian food too, so he really is happy. He says it is better then going to a restaurant any day, because we can adjust the flavors just as we like them, and not pay restaurant prices. My only wish is that the dishes would do themselves. The good news is that since we went gluten free, my little boy, age 6, has grown over 1 inch. He was really slowing down. I really think he needs to be gluten free more then all of us. He was the reason I went gluten free the second time, because he was gassy and crying way too much after about one month old. And his poopies were green instead of yellow. I guessed it was something to do with food, and my best guess was that it was the wheat I was eating, since I had been diagnosed with problems before, but was eating it again for convenience. I stopped eating gluten, and in about 4 days he was done screaming and diapers were the right color and texture again. I'm looking forward to meeting you all.
