Guest guest Posted December 29, 2005 Report Share Posted December 29, 2005 Turtle Black Bean Soup 3 c. black beans, dry 8 c. water 3 c. onions, cut into 1/2 inch cubes 1/4 c. garlic cloves, minced 1 1/2 c. carrots, cut into 1/2 inch cubes 1 Tbsp. olive oil 1 1/2 c. Roma tomatoes, diced into 1/2 inch pieces 2 tsp. salt 1/2 Tbsp. oregano fresh cilantro garnish 1. Sort beans and cover with water. Soak for 48 hours in refrigerator. 2. Pour off soaking water and cook beans in 8 cups water. 3. While beans are cooking, dice onions and carrots. Mince garlic. 4. Heat oil just until hot, not smoking. Add carrots, onions and garlic. Sauté on medium-high heat, adding 2 or 3 tablespooons of water as needed. 5. When vegetables are soft, add to the cooked beans in pot. 6. Blend 1/4 of the bean mixture until smooth. 7. Return this to the pot of beans. 8. Dice and add tomatoes. 9. Add salt and oregano. 10. Stir well and simmer for 10-15 minutes. 11. Serve garnished with fresh cilantro.
