Guest guest Posted April 8, 2006 Report Share Posted April 8, 2006 Good morning everyone! My pancakes were a yucky for the 4th time today... everyone's starting to get kind of crabby about that! Does anyone have a favorite tried and true recipe or mix? The kids want sort of a " regular " tasting pancake, not fancy or fruity. I've made a few different recipies recently. One time was good... the rest were yucky. Of course I made a huge batch! And I didn't write down my flour blend or egg replacement for the good batch. For store-bought mixes I've tried Bob's (ok), Craving Place (bland) and Arrowhead Mills Wild Rice (gross). We can't have gluten, casein, eggs or nuts. I served these for our Christmas morning family get together, everyone loved them. Soymilk pancakes 1/4 cup soy flour 1/4 cup potato starch 1/2 cup white rice flour 1-2 Tbsp sugar 1/2 tsp baking powder 1/2 tsp baking soda 1 tsp powdered egg replacer -OR- 1 tsp apple cider vinegar 1/2 cup soy milk 1/2 cup water 1 Tbsp canola oil In a large bowl whisk together dry ingredients. In small bowl (I just use a glass measuring cup) whisk together milk, water and oil. Add wet ingredients to dry ingredients and stir until combined.
