RE: Clear Gel?

I've been looking for Clear Jel for AGES with no luck! I'm interested in

finding out where I can buy it (no, my local HFS and Whole Foods do not carry

it),

and also in how it works in recipes. I read in one of my Benton Sisters

cookbooks that it sets up quick, but doesn't stay set for long, so you need to

eat

the foods right away. Is this true? How does it compare to agar agar or Emes

gels? And which product would make the smoothest jello recipe? I tried it with

Ko-Jel once and was VERY dissapointed in the lumpy, not quite gelled finished

I have a cookbook (Best Gourmet Recipes from the Chefs of Five Loaves Deli &

Bakery) that has a description of Clear Jel. They say,

 

Clear Jel, Instant

Cornstarch in reality, but made from a hybrid waxy corn, this starch has a

modified molecular structure and is pre-cooked to thicken upon contact with cold

liquid. It should be blended rather than stirred into your preparation -- it's

an excellent way to thicken cold fruit sauces (doesn't work with hear). Some

natural food stores carry it, but it's one of those items that is usually found

ony at a bakery supply or wholesale grocers' outlet in 25 lb. bags. Buy and

share, or ask your natural food store to carry it.

 

Clear Jel, Regular

Very similar to the instant version though not pre-cooked (looks just like

corn-starch), this has to be heated to become thick. It is superior to

cornstarch for cooked fruit sauces because it retains its silky, smooth texture,

hot or cold, whereas corn-starch-thickened sauces become jelly-like when cooled,

or if then stirred, have a rough texture. Bakers use this for jelly-roll

fillings or cheesecake toppings for that beautiful satin look. We like to can

blueberries in season thickened with Clear Jel and sweetened with fruit

sweetener. Then they're ready fo use for Fruit Pizzas or turnovers.

 

Well, then I went on the web to see who sells this stuff. I remember buying

some in a little baggie at a church campmeeting. Someone must have bought that

great big bag and shared it out. : )

No Walmart nearby, and I have checked repeatedly in every other store I've

been to! It's canning season now, though, and I do need canning jars. I'll

probably find the Clear Jel now. Marilyn
