Guest guest Posted June 6, 2005 Report Share Posted June 6, 2005 Grilled Polenta with Mushrooms Ingredients: (Serves 6) 1/2 pound button mushrooms, sliced - 2/3 cup instant polenta 2 ounces fresh porcini mushrooms, sliced 3 tablespoons tomato purée 1 garlic clove, crushed 1 tablespoon minced parsley 2 tablespoons extra - virgin olive oil 1/4 teaspoon soy sauce (gf) salt In a large pot, bring 2 1/2 cups water to a boil with 1/2 teaspoon of salt; whisk in the polenta. Cook for 5 minutes over medium heat, whisking all the while. On a moistened tray, spread the polenta to a thickness of 2/3 " ; allow to cool. In a wide skillet, heat the olive oil with the garlic. Discard the garlic as soon as it starts to brown. Add all the mushrooms and sauté over high heat until soft. Add the tomato purée and soy sauce and cook 5 more minutes over medium heat. Preheat the grill. With a round cookie cutter, cut twelve 2 " discs out of the cooled polenta. Grill the discs until brown.
