In fact I start telling people about it for egg replacement about 6 years ago when I read it suggested to use one of the 2 ounce jars of baby food to replace an egg in a muffin recipe. Squash and sweet potatoes, in particular, simply add a smoothness to the batter and help to hold the ingredients together - the same as eggs do. They are a perfect binder. For sweeter breads, applesauce or pearsauce also works. As well, canned pumpkin, not pumpkin pie filling but just pumpkin works well and it is actually just a squash too.
