Dry Ingredients. 1 packet Orgran Bread Mix 2 tablespoons (2 2/3 tbsp US) potato starch 1 teaspoon xanthan or guar gum 1/4 cup brown sugar 2 teaspoons GF baking powder 2 teaspoons finely grated orange peel (or 1 teaspoon dried peel) 1 teaspoon egg replacer 1 tablespoon (4 tsp) cinnamon 1 tablespoon (4 tsp) mixed spice (optional) Wet Ingredients. 6 teaspoons egg replacer 1/3 cup water 1/4 cup oil 1 tablespoon (4 tsp) honey -OR- brown sugar 1 teaspoon vinegar 3/4 cup soy -OR- rice milk 3/4 cup water 1 cup sultanas Mix together dry ingredients using a whisk. Set aside. Beat egg replacer with 1/3 cup water until fluffy. With mixer on low blend in oil, honey, vinegar and milk. Still with mixer on low, add to dry ingredients. Slowly add water. When blended, beat on high for about 1 minute. Mix sultanas through. Spoon into greased and lined loaf pan and bake in moderate (180°C/350°F) oven for 50-60 minutes.
