I don't have a tried and true, but the November 2005 issue of Country Home magazine has a recipe for Gingered Pear and Cranberry Tart (page 160) that uses pear nectar and/or apple cider for sweetening. A small amount of regular sugar is also used (3 Tbsp.), but I think it could easily be altered to honey. This is for one of the large, pie-type tarts.
