Guest guest Posted March 1, 2004 Report Share Posted March 1, 2004 Baked New Potatoes and Apples 2lb. small, thin-skinned potatoes [1 1/2-2 " diameters] 2 med. onions, cut in 1in. wedges 2 Tbsp. olive oil 1lb. red-skinned apples 1 1/4 c. vegetable broth 3/4c. apple juice 2 Tbsp. cornstarch 3/4 tsp. ground allspice Place unpeeled potatoes in 9X13 baking pan. Break apart onion wedges and sprinkle over potatoes. Add oil and mix well. Bake uncovered in 400-degree oven 25 minutes. Stir occasionally. Meanwhile, quarter and core apples, cutting into 3/4 " wedges. In a small bowl combine broth, apple juice, cornstarch, and allspice. When potatoes have baked 25 min. mix in juice mix and apples. Return to oven and continue to bake, spooning juices over apples and potatoes several times, until potatoes are very tender when pierced and juices form thick bubbles, about 25 min. more.
