Vegetarian Meat Loaf

Amount Measure Ingredient -- Preparation Method

1 cup chopped celery

1 cup sliced carrots

1 medium onion bagel -- peeled and quartered

3 cloves garlic -- minced

1 tablespoon ketchup -- divided

1/3 cup dry bread crumbs

2 large eggs

12 ounces meatless burger mix

12 ounces meatless burger mix such as lite life smart ground

cooking spray

 

preheat oven to 350

 

Combine first 4 ingredients in a food processor, and process until finely

chopped.

 

Heat oil in a large non-ctick skillet over medium high heat. Add onion

mixture; saute 5 minutes or until tender. Place onion mixture , 1/2 cup

ketchup, breadcrumbs, eggs, ground burger, and crumbles in a large bowl;

mmix well.

 

Place mixture in a 9 x 5 inch loaf pan caoted with cooking spray. spread

the remaining 1/4 cup of ketchup over top. Bake at 350 for 35 minutes. Let

stand 10 minutes before serving.
