Guest guest Posted October 31, 2004 Report Share Posted October 31, 2004 * Exported from MasterCook * Chicken-Green Chile Enchilada Casserole Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Cassaroles Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 teaspoon vegetable oil 1 cup onion -- chopped 3 cloves garlic -- minced 4 1/2 ounces green chiles, undrained -- chopped 12 ounces meatless fat free chicken strips 1/2 teaspoon ground cumin 1/2 teaspoon chili powder 20 ounces green chili enchilada sauce Cooking spray 14 corn tortillas, -- 6 inch 1 1/2 cups Mexican blend cheese, shredded -- divided fresh cilantro -- chopped Preheat oven to 375 Heat oil in a large nonstick skillet over medium high heat. Add onion and garlic; saute until tender. Add chiles; cook 3 miutes, stirring constantly. remove from heat; stir in chopped chicken strips. Combine cumin, chili poder, and enchilada sauce. Pour 1/3 of sauce mixture into an 11 x 7 inch baking dish coated with cooking spray. Arrange 1/2 of tortilla quarters over sauce mixture; top with onion mixture. Sprinkle with 3/4 cup of Mexican chese blend; top with 1/3 of sauce mixture. Top with remaining tortillas ands sauce mixture. Bake at 375 for 15 minutes. Sprinkle with remaining 3/4 cup cheese; bake an additional 10 minutes. Sprinkle with cilantro, if desired.
