Guest guest Posted March 4, 2004 Report Share Posted March 4, 2004 Green Bean and Potato Salad 1 lb. fresh green beans (can use frozen) 2 lb. red potatoes, cubed 1/4 c. olive oil 1/8 c. balsamic vinegar (or lemon juice) 1/2 tsp. garlic powder 1/2 tsp. Spike seasoning fresh or dried mint leaves, opt. Steam or boil green beans until tender but crunchy. Boil potatoes until tender. Combine ingredients and marinate for about one hour before serving.
