Guest guest Posted March 1, 2004 Report Share Posted March 1, 2004 COCONUT CREAM PIE 2 cups coconut milk 1 cup water 1 1/2 cups raw cashew pieces 1 cup corn syrup 1/4 cup cornstarch 1 tbsp. vanilla 1/2 tsp. salt 1/2 cup shredded coconut In a blender, blend all ingredients (except coconut). In a saucepan, heat blender mixture, stirring constantly until thickened. Spoon into prebaked pie crust, sprinkle coconut on top and chill.
