Guest guest Posted March 4, 2004 Report Share Posted March 4, 2004 Okra, Corn & Tomatoes 1 large onion, chopped 1 medium clove, garlic, minced 3 t olive oil 4 cups okra, sliced 3 medium tomatoes, chopped 1/2 cup salsa of choice 2 cups corn 1/4 t cayenne pepper Saute onion and garlic in olive oil until slightly brown. Add okra and stir continually until soft. All corn, tomatoes, and salsa. Add a little water to thin, if desired. Stir, cover and simmer for about 10-15 minutes. Serve over basmati brown rice. Yum!
