Guest guest Posted April 12, 2005 Report Share Posted April 12, 2005 Cool Cucumber Salad Servings 4 Make this salad one day ahead of time. 1 large cucumber, peeled and thinly sliced 1 tablespoon chives, chopped finely 1 garlic clove, minced 6 ounces, plain soy yogurt (commercial or homemade) 1 tablespoon lemon juice salt to taste 1 cup cherry tomatoes 2 tablespoons fresh dill, chopped (reserve extra for garnish) 1 tablespoon fresh Italian parsley, chopped (reserve extra for garnish) In a large bowl, stir the soy yogurt, chives, lemon juice, chopped herbs and salt together. Add the sliced cucumber and mix until covered with soy yogurt mixture. Garnish with the cherry tomatoes and the remaining herbs.
