Guest guest Posted April 12, 2005 Report Share Posted April 12, 2005 Hopping John A great southern dish. . .from Megan on CVC list 1 1/2 c. dried black-eyed peas 2 bay leaves 1 small onion, whole 1 small onion, finely chopped 4 tbs. vegetable oil 4 cloves of garlic, minced 1/4 tbs. red pepper flakes Rinse and sort peas. Cover with water, and bring to a boil. Turn off heat and let stand for 1 hour. Drain and cover with 4 cups of fresh water. Simmer with bay leaves and the whole onion (salt the water to taste, if desired) for 15-20 minutes, or until tender. Discard onion and bay leaves, drain peas and put aside. Saute the chopped onion in oil (in the same pot) until onion turns pale gold. Add the garlic and pepper flakes, and saute for 3 minutes. Return peas to the pot and stir well. If you'd like it to be more saucy, you can add some water after adding the peas. You can serve this with rice or bread for a nice whole-protein effect.
