Guest guest Posted March 14, 2004 Report Share Posted March 14, 2004 ASPARAGUS WITH QUICK HOLLANDAISE SAUCE 1 pound fresh asparagus 2 Tbsp. water 1/2 cup Veganaise 2 Tbsp. fresh lemon juice 1 tsp. Dijon mustard Grated lemon peel and lemon slices, for garnish Snap off the tough bottom end of each asparagus spear (it will naturally break at the right spot); discard ends. Place asparagus and water in a shallow microwave-safe casserole. Cover and microwave on High 4 minutes, or until crisp-tender (or to taste); drain. Meanwhile, in a small bowl, whisk Veganaise, lemon juice, and mustard until smooth. Pour over hot asparagus and garnish with lemon peel and lemon slices.
