I don't use Tom's bread recipe, but the Bob's Red Mill bread mixes instead. I imagine the egg substitute I use in my method would probably work as well in Tom's recipe. I use a flax seed gel (blend of ground flax seeds and water); about 1 - 1 1/2 Tbsp. per egg. It works well and the bread holds together nicely. However, Tom feels that the bread never works truly as well without eggs - he is not, of course, vegan himself. Guest guest Posted August 8, 2006 Report Share Posted August 8, 2006 I use three mini-tubs ( I think they are 2.5 oz each) of the gerber baby sweet potatoes or the gerber baby squash. I usually mix it up to two sweet potato and one squash. I've been doing this for well over???? Geez, a long time. Works great. I also use soy milk instead of water and have also used V8 instead of soymilk. There are other changes I've made to adapt the recipe to my son's food allergies. Michelle Messenger with Voice.
