I use it here all the time, in recipes where I'd normally use honey, in the exact same amounts. It's a bit thinner and lighter, but the sweetness and taste are just about identical. HTH! Amy, the instant Clear Gel thickens as soon as it comes in contact with water. Agave is tasty stuff! Light, though, could be more desirable (as they say light maple syrup is preferred over dark). I think it depends upon one's taste.
