Guest guest Posted February 3, 2005 Report Share Posted February 3, 2005 Orange Mashed Potatoes Source: Tropicana Pure Premium/adapted Orange juice is the surprise ingredient in the following recipe for mashed potatoes. You can adjust the proportions of the orange juice and milk alternative to your taste. 6 to 8 large potatoes, peeled and quartered 1/4 to 1/2 cup warm milk alternative of choice 2 tablespoons melted vegan margarine 1/8 to 1/4 cup orange juice Salt and pepper, to taste Boil potatoes in salted water until tender, about 20 to 25 minutes. When cooked, drain and place in a large bowl. Mix on medium speed until potatoes are crumbly. Mix together warm milk alternative, melted margarine and orange juice. Slowly add to potatoes, constantly mixing until mixture is free of lumps. You may not need all of the milk mixture, so be careful not to add too much. Season to taste with salt and pepper and serve.
