Well, I guess I have some ideas. ;o) I'll bring fruits, veggies, and beans. We'll make kabobs at least once. I would rather not cook in foil. Any ideas for me? Guest guest Posted May 11, 2006 Report Share Posted May 11, 2006 It isn't easy camping without gluten or dairy, but in our family, the camping must go on. We love camping. And we eat fine at home, so I bring those foods we love at home along with us. It isn't quite as easy as opening some hot dogs and some of those terrible nutrient deficient things we called buns, but our health is much better, and we are happy. We found out we still have a great time. Here are some of my standbys. - Haystacks - It is like a layered taco salad. On your plate put some freetos or other corn chips, then some beans, then lettuce, then tomatoes, sliced olives, diced onions, or any other veggies that interest you, then some salsa or guacamole or catsup (for my catsup addicted kids). Have the different toppings set out so everyone can pick and choose what they want on their own haystack. - fried potatoes with onions and scrambled tofu (or eggs if you eat them) for breakfast. - premade waffles with some syrup or some peanut butter or almond butter with applesauce on top - corn thins or rice cakes with some humus from home, and lots of carrot sticks, celery, or red bell pepper strips. - stir fry veggies. At home I make brown rice in my rice cooker. On the road I sometimes make jasmine rice in a kettle on the stove, or sometimes I go for quick and cook one of that quick brown rice. - I've been known to bring the ingredients for curry and make it right in camp. The smell probably drives the neighbors crazy with jealously as they sit looking at another hot dog. Our favorite memory of making curry was along the Cassier Highway on the way home from Alaska. Mosquitos were buzzy me, but I had a mosquito net over my head and gloves on my hands for protection. The only thing that got eaten was the curry. And the fresh air beautiful scenery made it taste even more delicious then normal. - I don't like using foil either, but occasionally make an exception for a camp fire meal. You probably have your favorite combination of foods to throw in the campfire to singe on the edges. If you don't want to cook it in the fire, cook the same things in your pan on your propane stove. - I have figured out that dried fruit and nuts really are food. They fill bellies and make for happy kids. I figure out it is much more nutritious then a peanut butter and jelly sandwich. Much more fruit, and you aren't just stuck with peanuts. Never mind that you don't have any bread. Hope this helps you. Guest guest Posted May 15, 2006 Report Share Posted May 15, 2006 Hi Shannon, I have to deal with this all the time because I am a jewelry maker and in order to work my booth at faires I have to cart along a cooler for a full day because there is never anything for me to eat. My favorite snacks: Corn tortilla with slices of tomatoes, almond cheese, quac and some lettuce, easy to roll up and eat. Rice cakes with almond butter (or cashew or peanut) There are some great soy jerky's out there now Celery with peanut butter Precooked rice at room tempature is easy and nice, you could even make some sticky before you go, roll them up into balls. You could also make hamburgers with the nut loaf recipes to grill. Another big hit was I made some vegie chilli before leaving, then all I had to do was heat it up over the fire and serve with corn tortillas or corn bread.
