The trick is to find them fresh - if they are stale they crack easily. Reheating helps. You can wrap in a paper towel and briefly nuke them in a microwave. We grill our corn tortillas with fillings and make quesadillas, etc. with green chiles, avocado, spinach, tomatoes...in a little olive oil. Corn tortillas are best served warm, for sure.
