Guest guest Posted January 8, 2006 Report Share Posted January 8, 2006 Hi everyone. My friend gave me a recipe for Surprise doughnut holes. NOt sure what book it was out of, she did not tell me. I held on to it for about a year, I have not made it because it takes 4 eggs and I am unsure how to change that many eggs in a recipe. But my husband was complaining about not haveing doughnuts! Again! so I broke down and made them today. OH MY GOODNESS then were SO GOOD. They tasted just like French Crawlers that used to be our favorite. So now I need to take the eggs out and keep the good texture and flavor. Surprise doughnut holes 1 cup water 1/2 cup (1stick) margarine 1 cup potato starch flour 1 tablespoon sugar 1/4 tsp. salt 4 eggs oil for deep frying cinnamon sugar In a 2-quart saucepan, heat water and margarine until mixture boils. Remove pan from heat and stir in, the combined flour, sugar, and salt. Continue stiring until the mixture forms a ball and pulls away from the sides of the pan. Then with an electric mixer, beat iin the eggs, one at a time , beating well after each addition. Mean while, heat the oil for deep-frying. Use either an electric skillet set at 375 or an automatic deep-fry kettle (such as a fry-daddy). Use at least 1 inch of oil in the skillet or add oil up to the marked line on an automatic fry kettle. Drop the batter into the heated oil by small rounded teaspoonfuls, a few at a time. Fry until they are golden brown, turning them to brown evenly. They will puff up to about 1 1/2 inches as they cook (about 5 mintues altogether). Remove and drain on paper towels. While still warm, shake in a plastic bag with cinnamon sugar ( 2 tbls. sugar to 1/2 tsp. cinnamon) makes 3 dozen holes.
