Greek Potatoes

 

 

8 large potatoes, cut into large wedges

3 cloves garlic, minced

1/2 cup olive oil

1 cup water

1 tablespoon (3 tsp) oregano

juice of 1 - 1 1/2 lemons

sea salt

freshly ground black pepper

boullion cube (optional)

 

 

Preheat oven to 440F (220C).

Put all the ingredients into a baking pan. Season generously with

sea salt and black pepper and give everything a toss to distribute.

Bake for 40 minutes or until potatoes are golden brown on one side.

Turn potatoes, season lightly with a bit more salt, pepper and

oregano.

Add 1/2 cup more water if pan appears to be getting dry, and return

to the oven to brown other side of potatoes, about 30 - 40 minutes.
