Guest guest Posted October 25, 2005 Report Share Posted October 25, 2005 Zesty Oven-Cured Tomatoes 2 tsp. olive oil 1 1/2 tsp. Italian Seasoning (or fresh thyme leaves, basil, or oregano) 1 tsp. sugar, white 1 tsp. garlic powder 1 tsp. salt 8 ea. tomatoes (fresh large, or 12 small-plum tomatoes) Slice tomatoes into 1/4-inch thick slices. Lay slices onto a baking sheet lined with parchment. Mix the olive oil and seasonings together in a small dish. Spread the seasoning mixture onto the top of each tomato slice with your finger or a pastry brush. You may also brush oil onto the tomatoes and then sprinkle the seasonings on top of the tomatoes. Bake the tomatoes in the oven at 250 degrees for 2 hours. If you have a gas oven with a pilot light, turn off the heat after 2 hours and leave it overnight. If you have an electric oven, bake for 2 hours, then turn to " warm " setting and leave overnight. When done, the tomatoes should be somewhat wrinkled and shrunken but still juicy.
