By " sauteing " the onions and garlic in vegetable stock instead of oil, it is very low cal and nearly fat free. I make it more like a lentil stew, but feel free to add more liquid if you like it thinner, like a soup. 2 C lentils 1 medium sweet onion, chopped 1 clove garlic, chopped 1 can diced tomatoes 1 C vegetable stock 6 C water bay leaf salt, pepper to taste - heavy on the pepper " Saute " onion and garlic in vegetable stock. Add tomatoes, lentils, and seasonings, bring to boil. Cover, reduce heat and simmer for 45 minutes. Adjust seasonings and enjoy!
