Guest guest Posted October 25, 2005 Report Share Posted October 25, 2005 Zucchini and Peas in Tomato Sauce 1/2 c. chopped onions 3 minced garlic cloves 1 stalk diced celery 2 Tbsp. oil 3/4 tsp. turmeric 3/4 tsp. cumin 3 c. cubed zucchini 2 1/2 c. tomato sauce 1 c. peas Sauté onions, garlic, and celery in oil for 2 minutes. Add turmeric, cumin, and zucchini. Cook over medium heat for 5 minutes. Add tomato sauce and peas and cook until zucchini is tender, about 15 minutes. Good served on top of brown, basmati rice.
