Reason why I ask is because of my children's dairy intolerance and that magarine is pretty bad stuff to eat. I would like to use it as a spread or in a baked item, I suppose the best is to stick to cold-pressed oils? I am not interested in just substituting a product for another for taste, but rather for health. If there's no good subs for butter then I will accept it. I sometimes fry up previously cooked millet--it's rather like polenta, but tastes *good*. I found a few in other cookbooks I had when I was searching last night, too. No shortage, that's for sure! Some have coconut, some have cashews, some do not have either. Millet is good.
