I'm also allergic to soy. Needless to say, this has added quite a few challenges to the family meal planning. [Cate] I have found I can substitute a mixture of sunflower seeds and pumpkin seeds to substitute for a lot of the nut meals called for in many gluten free recipes. I use 1 cup of sunflower seeds and 1 cup of pumpkin seeds buzzed together in a food processor in place of walnut, pecan, almond and peanut meal. Works great.
