I just had to brag a little bit on my newest favorite meal.  Pat, I think, had

reccommended a FatFreeVegan website, and I found a fantastic Louisiana Black

Beans and Rice.  I have only ever made yellow rice with black beans or red

beans, but canned beans and a bag of yellow rice.  This is raw beans that you

soak and simmer all day.  The recipe states 2-3 hours but mine was close to 4

hours, and I mashed up the beans a bunch while it was in the last 30 minutes.

Anyway, my husband has informed me that those are the best he has had and would

like them weekly.  Can you believe it?!?!?!  Now, he added some sausage to it,

but that was after 3 bowls with out.  I was shocked.  I am actually

contemplating if my late night snack will be the rest of the leftovers... Maybe

just some sewing and then to bed :)
