Sweet Potato Butter

Source: Lorna Sass' Complete Vegetarian Kitchen

 

1 1/2 c. mashed sweet potato

2 T. peanut or almond butter

1 to 2 T. maple syrup

1/8 tsp. freshly grated nutmeg

pinch sea salt

 

1. By hand or in a blender, combine all of the ingredients, adding maple

syrup to taste.

 

2. Use immediately or refrigerate in a well sealed container for up to 3

days. Serve at room temperature.
