Source: Newstart Cookbook

 

1/2 cup chopped celery

1/4 cup chopped onion

1 clove garlic, minced

3 cups seasoned bread crumbs*

2 cups cooked lentils

1/2 cup chopped walnuts and pecans

 

Simmer first 3 ingredients in a small amount of water until tender. Stir in

remaining ingredients, reserving 1 cup of bread crumbs, and let stand for 5

minutes. Add water (or nut milk) to obtain good consistency for forming links.

Form into 3 " links and roll in reserved bread crumbs. Bake at 350 degrees F.

for about 15 minutes. Turn and bake an additional 15 minutes.

 

*use gluten free bread crumbs if necessary

 

Makes 2 1/2 dozen or 15 servings.
