Guest guest Posted February 13, 2006 Report Share Posted February 13, 2006 I don’t know anything about the optimum nutrition bible, but I can tell you what we pack for lunches and maybe something will help :-) I always have muffins available (here is where I “hide” extra nutrition, I bake w/ bean flour or brown rice flour for protein and add pumpkin, berries, whatever I have that sounds good); baked potatoes w/ bac’uns by frontier brand; taco shells w/ refried beans mixed with soyrizo (vegan chorizo sausage) in a thermos; lentil (or any other kind of stew) in a thermos w/ cornbread on the side. I use Silk soy milk in the individual containers (the strawberry actually has strawberries in it and vitamin C) and calcium fortified individual juices. The individual fruit cups w/ applesauce or mixed fruit are handy, but one has to read labels carefully. I'm a healthy eater and call myself vegetarian, although I follow a vegan diet wherever possible and eat minimal wheat and gluten... Anyway, I don't have kids, but the below might - or might not! - appeal for packed lunches...? 1. Sandwiches with gluten free bread containing a mix of sweetcorn and chickpeas with vegan garlic mayonnaise, sweet onion jelly and lettuce. 2. Leftovers!
